What it is
Grilled fish from Wanzhou, in Chongqing, is a street-food classic that became a sharing dish across China. The whole fish is grilled first, then finished in a tray of chilli, Sichuan pepper and broth with vegetables. We make it with barramundi, and the vegetables are included.
How it tastes
麻辣 (má là): numbing from Sichuan pepper and hot from chilli, with smoky grilled skin and soft white flesh. Marked three chillies on our menu, so it is properly spicy.
How to order it
One fish feeds three to four people as a main. Order steamed rice, and something cooling such as the sweet lotus root or a cold drink.
