What it is
葱油鸡 (cōng yóu jī) is a Shanghai and Jiangnan classic. The chicken is poached gently so the meat stays silky, chilled, then dressed with hot oil that has been infused with spring onion until fragrant. We cook it with free-range chicken.
How it tastes
Clean, savoury and aromatic: silky meat, a little gelatinous skin and the sweet perfume of scallion. It is served cool, which is how it is eaten in Shanghai.
How to order it
Order a quarter for two people or a half for a group. It is a cold dish, so it comes out quickly and is perfect while you wait for the hot dishes.
